I have also to pondered on the journey from Ireland to Australia in the 19th century, and the various components of this trip
Two books I have located may be of interest to you

Keith Pescod,Melbourne historian and academic, has produced a volume entitled " GOOD FOOD,BRIGHT FIRES and CIVILITY "(British immigration depots of the 19th century)

For a more Australian perspective on the dispersal of immigrants once they completed their journey, another book"A PLACE TO LAY MY HEAD"(immigrant shelters of 19th century Victoria) may be of interest to you .
